Anita Johnson Brown's Mustard and Turnip Greens with Smoked Turkey

- 20 pounds of cleaned mustard greens (approximately 6 bunches)
- 3 quarts water
- 1 cup diced onion
- 1 tablespoon seasoned salt
- ½ teaspoon ground red pepper
- 1 teaspoon sugar
- 2 smoked turkey wings,
- 1 bay leaf
- 1 ¼ pounds turnip greens
- 2 tablespoons chopped garlic

- Trim stems from greens. wash greens, and chop greens to your desired thickness. In a pot add garlic,2 tables oil, and onions, cook on medium heat, stir until onions are simi soft, add turkey legs, and stir for 5-6 minutes. Turn heat on low, add greens, to the pot, ground red pepper, season with seasoning salt, 1 bay leaf, and sprinkle 1 teaspoon of sugar on top of greens, add water to the pot, and stir, turn heat back up to medium. When the greens start to boil, turn the heat on to low
Cover, reduce heat, and simmer for 2 hours or until tender. Remove, the bay leaf. Feel free to cook the turnips along with your greens if desired. Turkey wings should be tender
